Ancient White Park cattle came to North America during World War II, as part of a British program that evacuated national treasures to America for safekeeping. The cattle went to the Bronx Zoo and then to the King Ranch in Texas, where they were maintained as a closed herd for 40 years. The origin story of our British White cattle- there’s so much to tell, but this THE calf that started the journey! We love them for a couple reasons - they are relatively docile, easy keepers, who fart out calves and make great beef. To date, the associations don’t have EPD’s - which is hard for someone like me, but now that we’re 6 years into this and have a really close relationship with our processor, we’re confident in the quality. It was another exciting week at White Oak Pastures! Cattle continue to be on the move, while the garden crew handmade racks for drying garlic. Our flowers are in full bloom, and cucumbers and eggplant are ripe for the picking! More peach jams and jelly were made, which we are enjoying as much as the hogs enjoyed some melons.
